That cake looks dreamy. And I bet the carrot cake was pretty delicious as well.

This year I made myself a chocolate, and filled it with ricotta cream and chocolate chips--but usually i make some kind of ricotta cake.

Michela always wants a chocolate layer cake with traditional buttercream frosting for hers, and Laura changes around a lot. But she often picks some type of baked ricotta with chocolate pieces.

42 is a very good age!

Here is my favorite carrot cake recipe for you to try. It is so simple and the cake itself can be made in just one bowl.

Carrot Cake

2 Cups Flour

2 tsp. Baking Soda

1 tsp. Salt

2 Cups Sugar

1 tsp. Cinnamon

1 Cup Chopped Walnuts

Put all of the above in a bowl and beat together with 1 ½ Cups vegetable oil and 4 eggs. Mix well.

Add:

2 Cups raw carrots, grated fine

1 small can crushed pineapple, including juice. Beat well.

Put in 3 greased and floured 10" round pans. Bake at 350F for 30 minutes, until toothpick inserted in center comes out clean. (If using 9” pans, bake a few minutes longer.)

Frosting

1 8-oz. package cream cheese, softened

1 cube butter, softened

1 box powdered sugar

14 oz. package Angel Flake coconut (I don’t use the coconut, but it's delicious if you like coconut)

Beat together.

Put on a pot of coffee and call me when it's done!!

What a wonderful looking cake! Hope you had a wonderful birthday and wishes for many more. In our family the traditional birthday cake is a Hummingbird cake. A true southern delight.

Livia is so lucky to have a mother-chef that baked her an Italian-birthday cake for her birthday! My aunt married to an Italian used to make this cake once a year in the summertime. Soooo much work, but so worth it. Happy 42th Birthday Giulia!
