Wondering if you ever use honeynut squash in this recipe?

there are so so many varieties of squash! I researched it on line, and yes, I think that would work perfectly, too!

Yup. This is a new one. It's hard to find so I'm growing some right now. Supposed to be tastier and more nutritious and smaller than butternut.

thank you Jami! I loved these tagliatelle so much, even on their own, with a quick mushroom sauce!

Wow--totally going to try this this week. Market day is tomorrow and I'm sure I can find a delicata or a similar squash.

I was just checking and noticed that the Delicata squash is quite diverse from the Delica squash I used. I'd say, any firm, sweet, delicate squash would do!

Giulia:

thank you! I must confess autumn is my favourite season (even though summer vegetables are probably my absolute favourite ingredients in the kitchen)

Certainly risotto - cooler Fall weather will allow the first standing and stirring event of the season. The scents of sage and rosemary and crisp toasted walnuts say Fall to me.
